HOW TO COOK

For best results, defrost, put in deep tray with water to half cover. Add salt and any herbs to the water and then cover dish with foil and bake at 220C for 30 mins. Reduce heat to 110C and cook for several hours (6+). During the last 30 mins uncover and turn heat back up to 220C.

Meat packs are supplied frozen. After processing by our butcher all meat is snap frozen to maintain quality.

Freezing, as close to processing as possible, also significantly reduces histamines in food which is essential for anyone with a histamine intolerance.
